Tex Mex Chicken Bake

INGREDIENTS
1 pack uncooked boneless skinless chicken tenderloins (or you could substitute 3 - 4 cans of drained chickpeas as a vegan option)
1 - 2 Cups favorite shredded cheese (depending on how cheesy you want it!)
1 pack cream cheese, softened (set out to soften )
½ cup - 1 cup salsa (Just enough salsa to pour over chicken)
4 tablespoons favorite taco seasoning
1 tsp curry powder (optional)
Sprinkle of Salt to taste - not much!
A few grinds of fresh black pepper
Few sprigs of fresh cilantro, basil or favorite herb(s)
Italian Seasoning - enough to sprinkle on top - to taste
2 tablespoons olive oil
Supplies:
Baking dish, spoons, cutting board, safety knife or butter knife (parent supervision required!), parchment paper,
Directions
Heat oven to 350 F.
Season Raw chicken with a sprinkle of salt, ground black pepper and taco seasoning.
Cook Chicken on a medium heat- in an oiled skillet - until done - about 10 mins.
Line sheet pan with parchment paper
Place cooked chicken - laid evenly across amd beside each other - on parchment paper
Spread salsa on top of chicken
Place dollops (spoonfuls of cream cheese) on top of salsa
Sprinkle Shredded Cheese on top of cream cheese
Sprinkle some Italian Seasoning and Taco Seasoning on top
Bake for 5 -10 mins or until cheese melts
